Rhubarb tart

I love rhubarb unfortunately I’m the only one in our family. So we don’t eat it often. Actually this year is the first time I have made it myself.

The tart in a round steel pan. Without the custard (not sure this is the right word).

The prepared tart ready for the first round of baking.

Backed with custard now and perhaps a bit too brown, but not black.

After baking it - perhaps 5 minutes too long.

@V_ Looks good! I tried to make rhubarb bread a few days ago and it didn’t cook all the way through. The cooked parts were good though. 😄

@jabel that sounds interesting, is it just a regular bread dough with rhubarb added? Or would it be more like banana bread?

@V_ It's more like banana bread. The recipe is here. If you decide to try it, you'll likely need to bake it longer than it says. Also, the cinnamon sugar crust they have you put on top might be a bit much. If I do it again, I will cut it by half.
